2nd course: Petite burrata with cauliflower, olives, capers, Roman Esco broccoli, and toasted brioche crumble.
3rd course: Salad of roasted beets, mustard greens with hemp seeds, black currants, and roquefort chevre
4th course: Sea scallops over puree, roasted artichokes, kaniwa vinaigrette, toasted pepitas, and sprouts
